T
hanksgiving is the perfect time to ex-
plore the versatility and possibility of
wine pairings. The foods are rich and
decadent and the atmosphere is festive.
“The array of flavors provided at thanksgiv-
ing lends to a multitude of choices when it
comes to creating something spectacular,” said
Jeff Ward, wine and beer steward at Zupan’s
Markets in Lake Grove.
Ward and Rick Baldwin, owner of World
Class Wines in downtown Lake Oswego, share
their favorite wine pairings for the holiday. If
only it was this easy to stuff a turkey...

Jeff Ward, wine and beer steward at Zupan’s
Markets in Lake Grove, said Pinot noir is king
when it comes to fall cuisine.
“And what better way to pay homage to our vari-
etal of choice here in Oregon?” he said. “Its subtlety
and elegance is very forgiving and provides a wider
spectrum of pairing potential.”
Ward also noted that Pinot noir blends can show
nuances of earth, mushroom and spice.
“Just think about stuffing spices, cranberry sauce
and fresh seasonal mushrooms all coming together
harmoniously in a glass,” he said.
Recent varieties to Zupan’s include the 2011 Wal-
ter Scott “Willamette Valley” Pinot noir ($24) and
the 2010 EveshamWood “Le Puit Sec” Pinot noir
($36).
“If one wanted to venture out beyond Pinot noir,
Gamay noir is also a fun choice,” he added. “This
varietal is found in any wines from the Beaujolais
region of France, but a fun local choice would be
Brick House Gamay noir.”
When it comes to white varietal choices, Riesling
is also a great option.
“It can be anywhere from juicy sweet to bone
dry,” Ward said, “and the bright acid structure
combined with the herbaceous fruit flavors can
lend to a tantalizing experience on the palate. Our
favorite local gem as of late has been the 2011 Love
& Squalor ‘Willamette Valley’ Riesling for $20. It
has the perfect balance of acid, fruit, and subtle
sweetness.”
And don’t forget sparkling wine, which is often
overlooked for its food pairing potential.
“If you are poured a glass of bubbly, do not hesi-
tate to sip it throughout your meal. You will find
that it brightens up many dishes on your plate. Try
something pink to bring color and brightness to the
table,” Ward said. “Roederer Estate Brut Rosé for
$27 is a delicious and affordable choice.”
Top off the Thanksgiving evening with dessert
wine.
“Think outside the pumpkin pie realm and pair
some port with candied pecans, blue cheese and
