Sim’s Old Fashioned at Raven & Rose
The old fashioned is a whiskey purist’s drink,
and Raven & Rose’s bar crew thought long and
hard about which whiskey to include in their
version. They selected an unblended barrel of
Eagle Rare with a robust flavor to stand almost
alone, sweetened with dark muscovado sugar and chilled with
one large, slow-melting ice cube.

RNW Collins at Riffle NW
Brisk, refreshing, almost savory, Riffle’s
namesake collins is that exceedingly rare find
in the cocktail world: a new combination that
really clicks. Celery is the secret ingredient,
along with gin, absinthe, lime and salt. It’s per-
fect for a hot day, and it goes beautifully with oysters.

Cognac MaiTai at Hale Pele
Like any true tiki bar, Hale Pele is dedicated to
rum drinks — but not to the exclusion of a good
idea. It turns out that the simple, classic mai tai
is a great vehicle for the rich, rounded taste of
cognac, which is mixed with lime, curacao and
orgeat syrup, which happens to be one of the syrups that bar owner
Blair Reynolds bottles and sells under the brand name B.G. Reyn-
olds’ Hand-Crafted Syrups. If you like girly drinks, steer clear.
