Ken’s Truffle Cookies (provided by
Willamette Valley Confectionery)

he perfect cookie for sipping coffee, or with a bowl of ice
cream.
Mix them in with a tray of gorgeous chocolates to add a
flavor variety to your dessert!
1 cup unsalted butter, room temperature
1/2 cup Bakers sugar
1 tsp. vanilla
1/2 cup very finely chopped hazelnuts
1 cup chopped chocolate
1 cup cocoa powder
1 1/4 cups white flour
1 cup cocoa powder (reserved for rolling)
Heat the oven to 350 degrees. Whip butter, sugar and vanilla to-
gether until fluffy. Add chopped hazelnuts and chopped chocolate.
In a separate bowl whisk the flour and the first cup of cocoa pow-
der together. Add the dry ingredients to the butter mixture and
combine thoroughly. If the cookie dough appears crumbly, knead
the dough with moistened hands.
Form dough into 2-inch balls. Arrange on a cookie sheet lined
with parchment. The cookies will not spread. Bake for 10 to 12 min-
utes until well set but not brown. While still warm, roll in cocoa
powder. Cool and roll in cocoa powder again.
Makes two dozen 2-inch truffle cookies.
