der with a dry edge. It’s a clean, pale am-
ber, lightly carbonated, but with a sparkle
of winey alcohol and a pleasantly musty
autumnal tang.

Trapper Hard Cyder from
Carlton Cyderworks
It makes sense that wine country would
produce this sophisticated hard ci-
der. It’s aged for nine months
in whiskey barrels, and it’s
still, rather than bubbly, al-
though there’s a faint effer-
vescence to it. Apples are
present, yet it’s reminis-
cent of white wine and
definitely calls for a wine-
glass rather than a pint.

Hallelujah Hopricot from
Reverend Nat’s Hard
Cider
Portland’s own Reverend Nat makes
unconventional ciders with somewhat
unusual ingredients. The Hopricot gets
its name from a sweet tinge of apricot
juice and a bitter edge of hops, and it’s
fermented with French saison and Bel-
gian ale yeasts. The result is a
beverage that’s both complex
and refreshing.
